Ingredients
One small cabbage head, sliced into wedges
One pound of sliced smoked sausage
One can of diced tomatoes (14.5 oz)
Four cups of chicken stock

 

Instructions
Put the cabbage wedges in the slow cooker’s bottom.
On top of the cabbage, arrange the smoked sausage slices.
Cover the sausage and cabbage with the diced tomatoes from the can.
Make sure the ingredients are mostly covered before adding the chicken broth.
Cover and cook until the cabbage is soft, 6 to 8 hours on low or 3 to 4 hours on high.
Before serving, give it a gentle stir to blend the flavors.

 

 

Variations and Advice
You can add a can of rinsed and drained beans for protein or replace the smoked sausage with a plant-based sausage for a vegetarian alternative. Add a splash of spicy sauce or a pinch of red pepper flakes if you enjoy a little spiciness. To alter the flavor profile, you can also try using different kinds of sausage, such as andouille or kielbasa. Add a few chopped and peeled potatoes to the slow cooker for a richer stew.
